Absolutely delicious food, and some of the fastest service Ive ever had at a breakfast restaurant. I wish Id thought to take more photos but I was too busy eating. The lavender latte was sublime. The McHope sandwich was one of the best breakfast sandwiches Ive ever had. All waitstaff were excellent. Ill definitely be back!

Food was pretty good and came out super fast. Some good vegan options, which is usually hard for breakfast. They have a time limit on reservations, which are definitely recommended. Also recommend knowing what you want to order so you can get your food fast and enjoy visiting for 90 minutes :)

I had a great lunch at Hope Breakfast Bar in Eagan. Loved the Hawaiian salad and lavender coffee. Its a cozy place with nice service. Definitely recommend it

My partner and I were disappointed about the service we had during our recent visit to the Eagan location. After we sat down, server A brought two glasses of water to my partner. Server A later returned after we were not quite done eating and handed my partner our check. To Server A: hello? did you not see me, or was I invisible? Not sure where she got her serving training, if any. Server B came around to take our order after we sat there for quite some time. She didn't apologize for the wait and basically took our order and left. I could've put in the order myself if I was given the device. Server B later came back later to do the credit card transaction. Again, I could've done that on my own. I have started to wonder about our tipping culture and quality of service. Why, how, and what do we tip? I can't say if our recent experience was a "service". To me, both servers did the bare minimum, if that. Since that's the case, I can't find a reasonable justification for a 20-25% tip.
